Came for steak, came back twice for burger – Bavette’s

Bavette’s is a steakhouse which started in Chicago and then opened a second location inside the Park MGM in Vegas. The first time I tried it, I went for a steak dinner, and it wasn’t particularly memorable, so I never went back. Fast forward maybe about two years, and I was searching for the best “high end” burger in Vegas, and Bavette’s constantly came up (along with Peter Luger which only has it for lunch and which I will be going to in about a week).

Theirs is a double wagyu cheeseburger with American cheese, pickles, onions, dijonnaise, and fries (with ketchup and some sort of garlic aioli). You can also add an egg and thick cut bacon. The first time I went for the burger, I added the egg and the bacon, the second I went without. I prefer without. Anyway, the praise is well deserved. The bun is perfectly soft. The patty, is very well seasoned, and has an amazing crust. The ratio of bun to meat is perfect. The cheese adds luxuriousness to each bite. The sauce, pickles and onions add just enough of acidity to cut the richness. Each bite is just heavenly.

The fries are highly addictive and go so well with the garlic aioli. Both times I went, I was at the bar. The atmosphere is amazing. Its a beautiful space and has a dimly lit Chicago speakeasy vibe. Service was good and once you order, the burger comes out fairly quick. I will be back, and back, and back. I highly recommend it.
