New Izakaya Yagiya Understands Flavor

I recently went to check out a newly (July 2025) opened izakaya in Vegas called Yagiya. The waitress there told me the owner had about 40 restaurants in Japan and this was his first U.S. one. The menu is not overwhelmingly large, but I was disappointed that there was no daily “fresh sheet”. There was one item on “special” and it was amazing. More on that later. Here was the menu:

The first thing we tried was the eel on omelette. The eel was well grilled, the sauce was well balanced between sweet and savory, and the omelette was nice and fluffy. Not something I’d crave, but a well executed dish.

The next items were a couple of handrolls. The blue fin and wagyu. The nori was crisp though could of used a bit of seasoning. The rice and fillings were well done. I like the crisp garlic touch on the wagyu and the homemade soy sauce.

The next dish, the daily special, was a star! The sesame wings. They were bursting with flavor and whoever added the pepper knew that it would be the cherry on top. Every bite was an explosion of flavor, a perfectly crisp exterior and these I would crave.

The next dish was also a hit. The oda nobunaga chirashi. First, the rice was seasoned very well and added a magic touch of umami to every bite. The shiso added a nice freshness to each bit and the tempura eel added some texture. Each bite combined with fattiness and freshness from the fish was perfect. I added some soy sauce and wasabi/

To end the meal I added a couple more rolls. One was the baked crab which was like a baked California roll. It was ok. The second was a yellow tail one.

Overall, the service was friendly though not super attentive (used hand wipes and chopstick packaging were left on the table for some time). It was a bit slow also. The food ranged from good to outstanding. I would go back and recommend.
