I like Strip restaurants for the glitz, glamour, and ambiance. However, I also like smaller local spots that may not have the large scene, but they offer more “artisan” produced food, at lower prices. There’s a time and place for everything. Recently, I went searching for more authentic local sushi spots and came across Hiroyoshi. The menu looked promising because it wasn’t massive. They weren’t trying to please everyone. Yes, they did have some “funny” rolls, but unlike other local places, it was very minimal. Most items were focused on fish and a few appetizers. I started with the uni tempura:

It was fine. Good batter but not something I would get again. The sushi however, blew away all my expectations. We started with this round. Every single piece was delicious. The rice was good (though we asked for a BIT less on the 2nd round), pieces that needed wasabi had the perfect amount (I wish they used real wasabi), and pieces that needed garnish were well done and complimented, instead of overpowering the piece. We had the Santa Barbara and Hokkaido uni. Both were some of the best I can remember having. On the bontan ebi, I wish they gave me the fried head. They even brought us a commercial soy sauce and a house one that had hints of dashi.

I also got some unagi which was perfectly warm, with a well balanced sauce.

The sushi was so good, I ordered another round, a roll and tamago. The first to arrive was the roll with blue fin tuna and Japanese pickles. The tuna was well minced and the fatty softness exploded with each chew. The pickles added nice texture and the rice and nori brought it all together. This might be one of the best rolls I’ve ever had.

I tried to get ones that weren’t in the first round. Everything, like the 1st, incredible. Here was the tamago. This was the house special one. They also do a more common version as nigiri.

The tamago embodied the pride that a well skilled Japanese master takes in his work.
Overall, service was a bit slow but good, and well worth the wait. They servers I spoke to were proud of their restaurant and mentioned that they do a 2 hour omakase that I will DEFINITELY be back for and I highly recommend this place.
