On a recent trip to North Carolina, I checked out Rx Chicken & Oysters in Wilmington. It was my favorite meal of the trip. It started with the NC Pickled shrimp which was fresh and meaty. The shrimp were pickled just enough, without being over powering.

I also had the in house smoked fish dip with homemade crackers which I appreciated. Its really great when a restaurant cares so much, and has so much passion, that they make as much as possible from scratch. Many places, even high end ones, would of served bought crackers.

The pimento cheese was another hit. They served it with homemade biscuits, and ham. I made little sandwiches and enjoyed every bite. The biscuits were well made and the ham had excellent texture and freshness. The pimento cheese rounded out each bite though I recall enjoying the Pimento cheese I had in South Carolina more.

For our main, we had the fried chicken with mac & cheese and collard greens. The chicken was crispy and well seasoned. The meat was tender and juicy. The collard greens were delicious with great balance of acidic, savory, slightly bitter, and other flavors coming together in a juicy wonderful mouthful. The only area of improvement would be the mac and cheese which could use more cheesiness and seasoning.

For dessert I had the vanilla soft serve with caramel. I should also mention their take on the martini which used pickle juice from their house made pickles instead of olive brine. The result was a perfectly balanced drink with depths of interesting flavors.

Overall, this was my favorite meal of the trip. The service was outstanding too. I would go back and highly recommend.
