Braseria Could Have the Best Burger in Vegas…and Beyond?

Braseria is a new French-style restaurant from the same group behind other Vegas hits like Edo and Anima. The dining room feels like a modern French Brasserie. The ceiling is adorned with beautiful big chandeliers. The patio, which was not open yet when I went, is fairly large and has a nice view of the Strip; complete with a peak-a-boo view of the Sphere. This is a place you could go if you want to be close to the Strip, or have a “Strip-like” meal, without actually being on the Strip.

I met one of the owners while dining at Anima a few months ago. After speaking with him and learning about his history, philosophy, and experiences with food, I knew that the elements for a great experience at Braseria were all there. I’ve had a few bad experiences at new openings in Vegas. This was not one of them.

We started with the caviar and churros. An interesting combination but it worked wonderfully. The first bite was the kind that had my head spinning with flavors, saying “mmmmm” and knowing that it would have a place in my memory for all time best bites. The churro had a crisp exterior and warm fluffy interior. The way the fried bread enhanced the flavors of the caviar creating a harmonious perfect pairing is just something you will have to experience.

The cigar prawns had a delicate perfect fry on them and the filling was bursting with prawn flavor. If I had to guess, they took the contents of a prawn head and combined with the meat to give that perfect prawn flavor to each bite.

Next, the Tortellini was a play on the “French Onion Soup”. The pasta was cooked well (al dente) and the parm crisp added some nice umami. It was good, but this was not my favorite dish of the night.

Our server recommended the steaks but we had steak for dinner the previous night so we went with the burger. It could possibly be the best burger in Vegas and one of the best I’ve ever had. It reminded me of the burger at Au Cheval (Chicago/NYC). The bun, perfect brioche, the meat was ground in house from brisket. It was juicy, flavorful, and perfectly medium rare. If they seasoned it just a touch more, it would of moved from incredible to divine.

For dessert, a banana caramel pastry which was well thought through. Not too sweet with the perfect amount of caramel that left you wanting more. The interior had cold and frozen components which gave wonderful temperature contrasts with each bite. Pastry was well executed.

Overall, service was friendly, attentive and efficient. The food was outstanding. The location and restaurant itself was very appealing and once the patio opens, I can see this place buzzing every night. I would return to try more items on the menu, like the steaks (they also have happy hour prices), and I highly recommend.
