Vegas has a lot of good late night food options. I recently came across one – Ramen Boys. After a concert, I wanted something to eat. It was already past 11PM, but no problem. Ramen Boys is open everyday from 11AM to 2AM. When we arrived there was a bit of a wait, not because of a line up, but there was only one server and he was occupied.
Anyway, they have a wide assortment of different ramen and other small bites. I had the vegetarian one and my wife had the tonkatsu miso ramen. I didn’t have high expectations and was blown away:

I also tried my wife’s broth, and we both agreed the vegetarian one was, surprisingly, better. I’m not vegetarian, but just wanted something light. The broth was creamy and full of umami. The flavors run deep here. There was an abundance of crispy garlic. The noodles were cooked perfectly chewy. The ingredients provided heft to each bit even though they were “just” vegetables. Spinach, bean spouts and various other veggies all came together with the noodles to provide a “meaty” bite. I was think about the ramen as I drove home, and even the next day. I will be back soon and highly recommend.
