Located in downtown Las Vegas, Palate is an American restaurant with a very interesting menu. I went there last week for a drink and vowed to return to try the food. The space is beautiful with large chandeliers. They had live music the first time I went, and also last night when I went back to try the food.

The first thing I tried was the “Painter’s Beef Tartare – XO-frito, pickled red onions, furikake, watermelon radish, ryu aioli, foie cornbread“. It was prepared tableside and a total umami bomb. The flavors of the XO-frito were so savory and then the watermelon provided a refresh to each bite. I could not stop eating it. To top it off, it was perfectly paired with the cornbread.

The second starter I tried was the saganaki. I’ve had saganaki many times, including in Greece, and this was brought to a new level of delicious. First, its flamed tableside. Next, they slather a salsa rojo on top of it which taste more like a curry, but pairs so well and just adds layers of flavor to the dish. Again, totally addictive.

For main, we ordered the short rib which came with some mix up. This is what they brought us:

After eating a few pieces, they brought another dish and informed us that the previous one was an error and was in fact the wagyu steak! Anyway, they did not charge us for the steak but only the ribs. Both continued the trend of the previous two dishes in terms of being a party in your mouth. I had the steak with eggs in the morning, and could confirm the flavors were fantastic. A hint of char and well seasoned. We were too full for dessert, but I definitely want to go back and check out more of their dishes. There are a few things which caught my eye and will definitely be back and highly recommend this place. The service was good and the name of the restaurant could not be more reflective of the experience.
