T-Bones is the steakhouse located inside the Red Rock Casino in Las Vegas. The dining room, is modern, glitzy and was pretty busy on a Thursday evening. The meal started with a selection of breads including a blue cheese bread which I could not resist trying, and a white chocolate bread. I had to ask the server if I heard him correctly. “Did you say white chocolate”? The butter was from France. Both breads were well executed. The blue cheese did not overpower, and the bread was fluffy and warm. The white chocolate was just a hint, and enough to give a nice sweet contrast to the savory bread and butter.

For starters, our server sold me on the crab cakes. He said they were made with no filling. He wasn’t kidding. Each bite was meaty and full of crab flavor. It paired well with the remoulade sauce. I would get this again, and dream about it.

For mains, we ordered the prime rib and a wagyu special they had for $25/oz. The prime rib was aged and this is something I had not seen before in a prime rib. The aging was noticeable and gave each bite an extra hit of umami. I loved it. My only complaint was that it was only served with 4 different types of horseradish. There was no jus, Yorkshire pudding (in fact, our server didn’t even know what this was), or mashed potatoes. If they provided all the accompaniments, this dish would of been a solid 10. The wagyu was pretty good also. But the star was this prime rib. We also ordered some fries which were disappointingly soggy.
Overall, service and atmosphere were excellent. Food had noticeable standouts like the crab cake and prime rib. I would return for these alone, and recommend.
