I have always hesitated dining at Mizumi at the Wynn Las Vegas. The reviews are high, but Vegas has an abundance of good, and authentic, sushi places. At the same time, I have always been curious about the food at Mizumi; would it be an overpriced smoke and mirrors show? I finally took the time to find out. They recently renovated the restaurant and I made a reservation for a Sunday night dinner. Things didnt get off to the right start. Upon checking in, I was informed that our table was not ready. We sat at the bar and waited for a seat. No one at the bar asked for a bar order. After 30 minutes of waiting, I decided to follow up with the hostess. With a very bad attitude, she said she would follow up with the manager. Note that there were a few open tables I observed. I saw her talk to the manager, and then walk past me without an update. I went up a second time and was informed they had no tables but were working on it. We were seated shortly after that. The rest of the service was a complete 180. Our server, Woo, was amazing! Probably one of the best in recent memory. We started with the seared aburi salmon. This was delicious, but not worth $38. If you read this blog frequently, you will know I never comment on price unless something is obviously over or underpriced.

Next, we had some of the nigiri including an aged tuna, and uni. The fish was very good, and cut properly. The only thing wrong was the rice temperature was too cold. If it was warmer, it would be a near perfect bite.

We also had the sea bass yakitori which was also pretty good.

Shrimp and veg tempura was ok, but I would of liked a bit more shrimp (they give 2 per order).

At this point I ordered a few more pieces of nigiri which were pretty good in general other than the previous feedback about the rice.

We also ordered 3oz of Japanese Wagyu. It was served over Japanese coals. This was ok but not worth the $65/oz cost. I dont like Wagyu in general because its too marbled, but this was opposite, I felt it was not marbled enough. Our server mentioned that it was an olive fed version that has less marbling. Its not as balanced in terms of meat to fat. The king of that is Korean Hanwoo beef!

For dessert – Ice Cream.

Overall, except for the hostess, the service was impeccable. The food was good, but there are places in Vegas serving a more authentic experience for less $. This place doesn’t do omakase. Our server told us it was due to the type of crowd that wants to get in and out on the Strip. With gratuity, our meal came to about $1,000. This is the price of one person at Masa in NYC or about 6 meals at Kabuto which I used to think was the best in the WORLD. At this point, I’m unsure if I would return which never happens. I do like the convenience of being on the Strip, the dinner service, and the food is pretty good. So I may return if I am in a rush and looking for good sushi. However, if you have a car or even the Uber app, I would recommend other sushi places in Vegas over this place first.

Their former Executive Chef Min Kim was fired before the Mizumi reopened. I’m surprised the food was so good because they currently have no Executive Chef and are not exactly announcing it either. However the stories of the poor service since they reopened are becoming a serious issue. I’d wait until they announce a new Executive Chef, wait for six months and then give it another try.
Our server actually mentioned that they didnt have an EC and I was surprised too that they were still holding it together on the food side.
