Stuck at home due to social distancing and isolation?  Make this comforting and easy dish.

Ingredients

Olive oil

1 diced onion

1 diced red pepper

2 diced carrots

2 diced celery sticks

salt

pepper

4 cloves garlic minced

2 tbsp chili pepper

2 tbsp cumin

1 tsp paprika

1 tsp oregano (I didn’t have any so I used thyme)

1 can diced tomatoes (I didn’t have any so I used a whole tomato chopped)

1 can black beans

flour (optional)

2 cups water

1 bay leaf

This is all you need:

Heat up some olive oil over med high heat:

Add the diced vegetables, and season with salt and pepper:

Once the onions are translucent, add the garlic and spices; reduce heat to medium:

Add the tomato and cook until the tomatoes break down, then add the beans, season again (at this point you can add about 1tbsp of flour; this is optional and only if you want a thicker broth):

add the water and then the bay leaf and turn the heat to high until boiling:

once boiling, reduce heat and simmer for 30 minutes:

Before serving, taste and adjust the seasoning (salt and pepper) until it taste good to you.  Once ready, serve with your choice of toppings: cheese, avocado, fresh lemon juice, tortilla chips:
