Condita is a one Michelin star restaurant located in Edinburgh, Scotland. This was my first dinner in Scotland. The restaurant made a few positive impressions on me upon first walking in. First, I learned that the art on their walls is hand painted and changes with the seasons, just like the food.
The restaurant itself is quite small, with only six tables in the dining room. The second thing which impressed me at the start was the “menu”. It was in the form of a hand drawn book mark representing the ingredients that would be used in the evening’s meal. It changes daily. Also, although my wife and I had the same tasting menu, her bookmark was slightly different from mine in terms of the drawings.
The meal started with some amuse bouche which were delicious and beautifully presented.
Another thing which impressed me about the restaurant was their attention to detail. For example, many of the items they use or serve in their restaurant comes with a story about the provenance of the item. Here is the information about the water they serve in their restaurant. Quite impressive:

Another thing that impressed me about the restaurant was that they would incorporate Asian ingredients or techniques in their dishes, and they were incorporated very well. They enhanced the dishes as opposed to trying too hard to create fusion. You will see in the meat course below that they created a bao. What is even more impressive was that they pulled all this off, despite being told that they had no Asian people on staff (and if I recall correctly, the chef had not ever been to Asia).

..and then just like the water, a story about the tea we ordered, which was prepared with very careful and high attention to detail in an almost ceremonial like maner.

Overall, service and food were good. I would go back and recommend to someone.
