Sushi Tama is a located in Beverly Hills and serves al la carte at the tables, and omakase at the sushi bar. They also have a patio. The bar is where you want to be and its where I recently had their omakase. I would give it a solid 9/10. The cost is $180 pp. The atmosphere is nice and relaxed, not too traditional, but not too “neighborhood sushi vibe”. Its somewhere in between.
The meal started with crab which had a good balance of acidity and sweetness.
This was followed by some sashimi and torched fish. Both excellent.
They also served some cod sperm, another torched fish but this time on rice, and monkfish liver topped with caviar.
Next came the nigiri. The rice was well done and each piece was delicious. Perfect portions of rice and fish.
At this point, the chef did something I had never seen before. He took a whole fish, stuffed it with rice, and then rolled it! Then he cut it and served it in some nori.
Then, back to the nigiri:
Toward the end of the meal, there was some miso with a yellow tail broth, sweet pickle rolls, and for dessert, an ice cream sandwich.
Overall, this was a near perfect meal. The food was excellent. The service was excellent. The chef serving us moved from Japan just a few months ago, and was very pleasant to talk with. I would definitely return.
