My last dinner on a recent trip to Panama was at Maito, rated as the “6th Best Restaurant in Latin America” by the 50 Best List. I think it was well deserved. Flavors were full of umami, and creatively incorporated Asian elements, into Panamanian dishes. As I wrote about in a previous post, Asian cuisine is actually a big part of the Panamanian food scene.

I went with the tasting menu which started with this delicious broth. The broth was their take on a classic San Cocho and was smoky and good.

Followed by some amuse bouche.

The main courses were composed of fish dishes. Very very good. The first was a “sea bass soup” which made good use of furikake and dashi with a nice smoked flavor.

For dessert, they served a very special, and expensive, Panamanian coffee that was explained about in great detail to us (Google about Geisha coffee in Panama).

Overall, this was an incredibly delicious meal incorporating Panamanian and Asian flavors without trying hard to be “fusion”. Service was good and I would return.
